Types of potatoes: a seasonal guide
Senior Food Editor at M&S Food

What are potatoes?
Spuds, tatties… whatever you call them, potatoes are one of the nation’s favourite root veggies. Potatoes originated in South America and have been cultivated for thousands of years.
There are a variety of flavours, sizes and textures to try, suited to different cooking techniques. Smaller new potatoes, like those seasonal gems, Jersey Royals, are delicious in summery salads, while larger, fluffier Maris Pipers and King Edwards make the best roasties and mash.
Keep reading for our complete potato guide, including the best types of potatoes to use in cooking, where we source our potatoes, and seasonal varieties to try.

Best-in-season spuds

Jersey Royals
Grown exclusively on the island of Jersey, Jersey Royals have a nutty flavour and buttery texture thanks to the island’s mild climate and rich, fertile earth. Our first-in-season Jerseys are grown in glasshouses, which allows them to be harvested that little bit sooner and sent to an M&S Foodhall near you – look out for our early season Jersey Royals in selected stores.
Where do our Jersey Royals come from?
We have an expert team on the island dedicated to ensuring M&S only gets the pick of the crop. We work with growers like seventh-generation farmer Philip Le Maistre, who ensures only the tastiest Jerseys make it to our stores. He also employs regenerative farming practices at his family farm, like planting hedgerows and wildflower mixes, to enhance biodiversity.
What to cook with Jersey Royals
To enjoy their delicate, sweet flavour at its best, keep it simple – try Jerseys simply steamed and tossed with butter and fresh mint. But they do work well for roasting, especially later in the season, when they're slightly bigger – give our Jersey Royal hasslebacks with truffle mayonnaise a go.
They also work a treat with creamy cheeses, as in these easy Jersey Royal and parmesan flatbreads. Make Jerseys the star of this easy three-ingredient focaccia, a simple potato curry, or an easy Jersey Royal and green bean salad.
New potatoes
With a delicate flavour and buttery texture, new potatoes – which are at their best in spring and summer – are a seasonal treat. Our M&S Select Farmers select the very best British new potatoes, harvesting from before sunrise to ensure only the top spuds make it to store. We aim to have them delivered within 48 hours of being picked.
Where do our new potatoes come from?
We only work with trusted M&S Select Farmers, like Nick Goff, of Norfolk’s Crow Hill Farm. The farm’s deep, sandy soils and high levels of sunshine are what give the potatoes their sweet flavour. Nik works in harmony with nature to help protect and enhance wildlife on the farm.
What to cook with new potatoes
If you can't get enough of golden, crispy bits, try Tom Kerridge’s smashed potatoes with whipped feta, or irresistible parmesan potatoes with a creamy blue cheese dip.
Or bake into a simple, summery traybake with cod and cherry tomatoes for a winning one-pan dinner.
They also work a treat with bold spices, like this fragrant korma traybake or chickpea and potato curry.
Maris Pipers
The O.G. variety for the very best roasties, thanks to their ability to go gorgeously golden and crisp on the outside and stay fluffy and light in the middle.
Where do our Maris Piper potatoes come from?
Our Maris Piper potatoes are sourced from trusted M&S Select Farms who always choose the pick of the crop for our Foodhalls.
What to cook with Maris Piper potatoes
It’s all about golden, crunchy roasties. Try Tom Kerridge’s game-changing roast potato recipe with our fluffy British Maris Pipers next time you’re in charge of Sunday roast.
Their floury texture also makes Maris Pipers great for mash, like in the topping for this spiced-up version of the classic family fave, curried cottage pie.
Baking potatoes
A jacket potato is one of the nation’s favourite dinners – and for good reason. To level-up your baked spud, choose our Ultimate Jacket Potato. It bakes up to golden, fluffy spud perfection.
Where do our baking potatoes come from?
They’re specially selected from the best potato varieties to ensure they’re guaranteed to go gorgeously golden and crisp on the outside and silky-smooth and creamy in the middle.
How to make perfect baked potatoes
Rubbing the skin with a little oil and sea salt will help the skin go gorgeously crisp and golden. Pierce the potatoes with a fork, but don’t wrap in foil – it’s not necessary. Allow plenty of time for them to bake fully in a piping hot oven.
Then it’s all about loading them up with flavour-packed toppings. Try a hearty vegetarian chilli or punchy spicy chicken. Or give our take on the viral cheesy bean jacket potato a try. Inspired by the social media trend, this crowd-pleasing traybake loads fluffy jacket potatoes with creamy cheese sauce and baked beans, before being topped with even more cheese and baked until golden and bubbling.
